Bread Improver Improves Bread -- Our 4-Loaf Test



Trying to build our own bread recipe in order to rely less on pre-mixes, we had been making a loaf a day the past week, experimenting with the basic recipe.

Loaf 1 (inspired by the pre-mix):
> Baker's flour + yeast + salt + sugar + water
>> A sad brick you won't want to feed to the dog.

Loaf 2 (inspired by bread machine's recipe):
> Baker's flour + yeast + salt + sugar + water + butter
>> A dry and uninflated loaf.

Loaf 3 (following bread machine's recipe):
> Baker's flour + yeast + salt + sugar + water + butter + milk [liquid milk, not powdered as suggested]
>> Uninflated similar to Loaf 2, but softer and more edible insides.

Loaf 4 (Loaf 3 + bread improver):
> Baker's flour + yeast + salt + sugar + water + butter + milk [liquid milk, not powdered as suggested] + 10% of flour weight in bread improver
>> JUST RIGHT. It fluffed up like a Laucke bread pre-mix!
