Vegetable Query: Fennel


I discovered Fennel last year: the first try was a raw fennel salad; sliced fennel bulbs tossed in lemon juice, along with Parmesan cheese. That was refreshing. (More so if you like the fennel flavour, like its seeds.)

This time, I boiled the fennel bulbs in a little bit of Chicken stock, and a generous amount of lemon juice, seasoned with some dry herbs and salt. I kept it simmering until much of the liquid evaporated, about 30-40min. The result: Soft and fibrous, savoury, and still flavourful.

How about a Fennel gratin?

  1. One of my favourite things, I like it raw but it's also nice roasted with salt and pepper and a little olive oil. Fennel gratain would be lovely too I think.

  2. Oooh I love fennel. In fact we had fennel last night. I sauted it with some sliced leeks, and fennel seeds, tiny bit of stock, cream and pepper, oh and garlic of course, and had it with pasta and a side salad. Yum! I think it is a very versatile vegetable! Thanks for visiting me! Suzie xxx

  3. We mainly eat raw fennels from our vegetable garden, but sometimes we have them "au gratin" with stringy cheese (cheese slices, those ones you use for rarebits)

  4. I love fennel, raw in salads, or as a mid morning snack - it's surprisingly sweet!! Or I roast it with a little oil and salt and pepper!! I'll give the boil in stock method a go too!!! Yum!! The Barefoot Contessa has a great recipe for fennel gratin!!!

  12. I distinctly remember living a comment here telling you how I liked my fennel best raw, on its own or in salads with olive oil and salt, but my mom also bakes boiled fennel with bechamel sauce, melty cheese and ham... did I forget to type in the capcha phrase?

    Anyway, yeah. There it is. Luuurve fennel.
